Well, Sur is a nice small coastal town so there won't be much to spend money on. In that regard, it should be easy enough to save 350 - 400 rials per month on a 700 OR salary - I am assuming he is coming alone while you stay in Canada.
And the 48 hours seems a bit much! I can't see that he will actually teach that much, but if he did, then overtime wages would bump up the gross amount at the end of each month.
Oman is a pretty great place and the coast, beaches, wadis and small mountains of the Sur area are quite beautiful. For a first timer trying to get ME experience, it is a good start.

Is your child in school? School fees would make a huge dent in that income - if schooling is even available there for a non-Arabic speaker.
