ive found that many schools like to do demos with the students to gauge their reactions, but it depends on the school. ive also been asked to 'imagine' i was talking to twenty junior high students when there was only one person in the room.
they will usually ask you to teach a page or two of material that they give you ahead of time - again, how much time depends on the school - but many schools ask you to show up 20 minutes early to prepare.
they want to see energy, confidence, a smile, and the ability to create a rapport with students. humor and 'stage presence' go a long way regardless of age. generally, taiwanese are not used to teachers who use a lot of physical gestures so its a good gimmick to keep their attention.
tips (this has worked for me, but everyone has their own style):
dont be nervous, its just 20 minutes
get the students involved and talking
explain the concepts and ideas youre teaching keeping in my mind the four different styles of 'learners.' explain the material orally, use the whiteboard, give different examples, make gestures, etc.
know your audience. if its a kindy, act like a clown. if its adults, act like an incredibly smart and sophisticated clown
