Hello, I'm interested in coming to China and I want to bring my girlfriend (not wife, not fiancee) along with me. Is it possible to obtain an employment invitaion for both myself and her that will allow us to come togther? She doesn't want to work, and will most likely take a Chinese language course to pass some of the time while I work.

No, she will not be classed as a dependant of yours. She will either need to come on an L visa (tourist) and leave the country to get it extended from time to time (maybe can do it once in country) or apply for and be accepted for a course near your work and come in on an X visa (student).

Your girlfriend cannot be'invited' by your employer. She will have to take care of her visa by herself.

But you ought to tip off your employer about bringing her to China.

However.. in a Chinese language school...there is a possibility of a Student visa.. while you work on what ever your school sponsors...several musicians I know attend school for the visa and the lessons and play in local area bands...one such band I know just appeared in a movie...
