I use Nomad travel insurance- they gave me a great deal and are recommended by Lonely Planet.

The link is below however, I'm British so costs may be higher for you if you're from the U.S.

I've heard someone say that it's void if you didn't have a return ticket to your home country already when you applied for it. Any truth to that? If so, makes it pretty impractical for most EFL teachers.

I went and found my policy- the terms and conditions state that I must either have a permanent residence in the UK or have a valid British passport.
It doesn't say anything about flights!
