Hypothetically speaking, if I lived in Panchiao and wanted to see some beautiful, scenic, remote and quiet places that were easy to get to (daytrips), where would I go and how would I get there?

Are you going by bus or do you have your own scooter? If you have a scooter I can recommend a few good day trips.

A really nice 1 night trip if you don't get sea sick.
Star Cruises offers a one night cruise that counts as legally exiting the ROC. It is not possible to get a visa on the ship however you may be eligible for a 30 day landing visa upon return.
The current price is about 3000 to 4000 NT. Includes a shared room and food. They also have dinner shows and activities.
Contact Start Cruises in Taipei or any travel agent for information.

Head out to Yangmingshan or the mountains of Keelung. You can take the train to Keelung and then a taxi or walk. Yingge, the pottery center -- lots of fun -- is a good day trip, and so is the wood carving center in Sanyi in Miaoli, all accessible by train and bus within a couple of hours of you. The NE coast of the island is gorgeous and fun, but you need transport. The mountains south of you have lots of interesting stuff, and of course Taipei is a blast for a day trip. Don't you have a copy of the Lonely Planet guide?

I do have the lonley planet guide but what I want is some good places that are remote and beautiful around Taipei ...

Been to Miao Li, been to Ying Ge ... all well and good

Yang Ming Shan I find as an overall disappointment but perhaps I am missing something.

What are some of the best coastal areas around the north?

Wu Lai is nice in the summer. You can go swimming in the clean water and sit on the shore and get some thermal water action. Illan is ok and Keelung is cool. How about TamShui? It's crowded but the food is good and cheap. Taipei Zoo, National Palace Museum, Tai Shan is near Banchiao as well.

From Panchiao it is very easy to get to Sanhsia. Not far beyond Sanhsia are some beautiful places in the mountains. Manyueyuan is accessible by bus although it would be easier to get there via your own transport if you have it. If you want to travel a bit further visit Dongyanshan. Although it is not scenic or remote Yingge (aka Yingko) is an interesting place and not far from Panchiao.

More details about some of these and other places are on my website.
