I have read past threads about demos for interviews so I won't bore anyone with the same old questions. For my interview, our 'students' are the other applicants. I was wondering if we are to treat them as native speakers and adapt material to suit them, or treat them as EFL students? For example, should we do an exercise that realted to teaching in Japan, or an exercise to help students order food in a restaurant?

I'd treat them as students. Those watching you for the interview are concerned with how you relate to EFL students - not native speakers - and this includes how you adapt your spoken/body language and any materials you might use as well as deal with any curves thrown your way by your "helpful" colleagues pretending to be students.

Treat them like students and they should act as such. I'd teach a vocab lesson, it is easier and takes less time than a grammar lesson.

In my interview with ECC Junior, the other applicants as well as the Japanese staff served as my demonstration students, all presumably at the age of 5 to 7 years old. They were all to be treated as EFL children just learning English.

Whew! It was...interesting to say the least.
