I'm planning on taking the CELTA class in January and then doing some traveling, so I'm not sitting at home in the US until I find a job. Does anyone have experience applying and doing all the paperwork from abroad? I am curious how much longer it takes and how much more difficult it will be.

Yes, I applied from outside my home country. No problems - not difficult at all.

All you should check on is how long it will take the consulate to process your visa application if you're not normally resident in that country. Residents usually get a next day turn around option, for non-residents it can take up to two weeks.

However, if you're doing it well in advance, it's not a problem.

I'll ditto that. I applied for my first Russian work visa in the Czech Republic in 2008 - no problems (I'm a U.S. citizen). I used an agency, as my Russian and Czech were non-existent at the time. Just be sure to do your research about how long it will take; mine was a little less than 3 weeks with regular processing. I just dropped off all my paperwork and went traveling while waiting for it to be completed. Not a bad way to deal with bureaucracy.
