What kind of standard of living would this allow? Would it alow me to save 1500RMB a month?

I wont be buying imported cheese or anything like that, but I do like my socialising and the odd weekend trip in the province.

Your thoughts please.

that really depends on whether the job comes with an apartment or not! If you have to get your own place that's an extra 2-3000 rmb a month + will you be paying tax on that?

If you have to get your own apartment then avoid the bars cook at home and eat street food you should survive but don't expect to save much.

If it's provided then you should be able to save around 1500 rmb a month.

I agree with 80daze, but add that 2000 is low-end in Guangzhou, and 3000 ain't high-end. If the employer is not providing an apartment, will you share with someone? Is the workplace in a high-rent district? If yes, how far are you comfortable commuting?
