Im a Canadian teacher currently working in the middle east. I plan to live and work in Turkey within the next few months. Is it possible for me to just fly to Turkey and get a work permit at the airport instead of flying all the way back to Canada and go through a long visa process?

Unless I'm very very wrong: no. You can get a 3-month tourist visa at the airport.

Airport officials don't give work permits anywhere that I know of!!!
Think of how the Canadian system works: it's fairly similar to the rest of the world. Obviously would-be immigrants aren't just flying in and getting a work permit from an airport security guard.

You can't get a work permit, your employer has to do that.
You can enter on a tourist visa of whatever length your nationality allows. You then apply for a residence permit when you have found somewhere to live.
