I'm slated to teach a Pedagogy course, my first time. While I'm awaiting more details, I'd like to know which books and resources people have found particularly helpful.

Pedagogy is an extremely broad topic. Could you narrow the focus a bit?

Yes, I completely agree that it's a very broad topic, and with a little luck and proper alignment of the planets, it will be narrowed down for me before I start teaching Confused In the meantime, I figured I might as well start exploring and picking brains.

Here are some questions I would ask/answer if I were asked to teach 'pedagogy':

Who are the teachers (or would-be teachers) you will be teaching?
What previous training (if any) do they have?
What sort of educational system are they accustomed to?
What beliefs do they already have about teaching/learning?
What practices are they currently using/have used/will use?

What are the goals of the institution/state/society?

Who are their students? (age, gender. previous education, etc)
What educational system(s) are they accustomed to?
What are their learning goals?

What subject(s) will be taught?
At what level?
In what circumstances (class size, access to technology, materials)?

Great questions! If I should have to walk in cold, which is a distinct possibility, I will at least have material for the first class.

Teaching by Principles is a good overview book for those teaching ESL to adults. It doesn't go into a lot of depth, but might be a good resource to get people thinking and exposed to different pedagogy topics.

'walk in cold' - must be an idiom from the tropics.

I'd suggest you ask your employer for what exactly s/he means by 'pedagogy'. You might be surprised.
