I want to hear some Christmas Baking ideas..
My and the wifesly are going to a potluck....
I'm bringing:
THE best mashed potatoes (mashed with sour cream and "a lot of" garlic...damn...good stuff)
Dutch Appeltaart (That's apple tart)...like apple pie but way, WAY better. My moms emailing the recipe though.
Boeterkoek (Dutch: Butter cake). Don't kid yourself...that is EXACTLY what it is...and it is SOOOOOO good. I called it "Edible crack" in uni...
I wanted to pass on the recipe because it's pretty easy...
1 cup (2 sticks) butter
1 cup white sugar
1 egg
2 teaspoons almond extract
2 teaspoons baking powder
2 cups all-purpose white flour
Preheat the oven to 350 degrees F. Melt the butter. Stir in the sugar, egg, and almond extract. Sift together the baking powder and flour and stir into the mixture. Spread into an ungreased 9-inch pie plate and bake for 25 minutes. Cut into wedges while warm.
Anyone else have some good ideas? |

Mulled Wine! All ingredients easily available (in Seoul anyway), and I'm sure there was a recent thread on it here too....
A Modern yet Traditional Mulled Wine Recipe:
2 lemons
2 oranges
1 - 750 ml bottle of medium, to full, bodied red wine Nutmeg (to taste)
Cloves (to taste)
1 oz brandy or Cognac (or to taste)
1 cup (250 ml) granulated sugar (optional)
Herbal or citrus influenced tea (optional but excellent)
Water (optional softener instead of tea)
4 large cinnamon sticks
4 candy canes
Instructions for making four large portions
-Cut lemons and oranges into slices.
-Pour the red wine into saucepan and gradually heat.
-Add fruit slices, nutmeg, cloves and brandy.
-Keep an eye on the mixture and wait until it becomes hot to the touch.
-At this point you could blend in sugar or water (if desired).
-Pour into glasses/mugs and add tea (to taste).
-Garnish with cinnamon stick and candy cane.
Serve

I have two rather nice ones that make the house smell really good on a cold winter morning.
Dutch Apple Cake (it isn't a cake)
3-4 cups of sliced apples
2 teaspoons of cinnamon mixed with
1/4 cup white sugar
1/2 cup crushed walnuts
1 egg
2/3 cups sugar
2/3 cups flour
1/4 cup oil
1/4 cup lemon juice or orange juice
1. Put the sliced apples in a 9" pie plate and sprinkle with the cinnamon/sugar mixture. Top with walnuts.
2. Beat the egg and mix in the sugar, flour, oil and lemon. Pour over the apples.
3. Bake in a preheated oven set at 400 degrees F. till the top is golden brown.
[The top is nicely crispy and the lemon flavor goes really well with the baked apples/cinnamon flavor.]
German Apple Pancake
4 eggs
1/2 cup flour
1/2 teaspoon baking powder
1 Tablespoon sugar
pinch of salt
1 cup milk
1 teaspoon vanilla
2 Tablespoons melted butter
1/2 teaspoon nutmeg
1/4 cup butter
1/2 cup sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 large apple, sliced
1. Blend the eggs, flour, baking powder, sugar salt.
2. Gradually add milk, stirring constantly. add vanilla, melted butter and nutmeg. Let sit for at least 30 minutes. (Overnight is good, too.)
3. Preheat oven to 425 F or 220 C
4. Melt the 1/4 cup of butter in a 10" oven-proof pan/skillet.
5. combine 1/4 c of sugar, cinnamon and nutmeg and sprinkle over the butter. Lay the apple slices in the melted butter in a flat layer. Sprinkle the remaining sugar over the top and cook until bubbly.
6. Pour the pancake batter (previously made) over the top.
7. Bake 15 minutes then reduce the heat to 375 F/190 C and bake another 10 minutes.
This one expands as it bakes and slides up the sides of the pan. The pancake comes out chewy. |

Are you of Dutch descent? My mom's side is. Every year we make Bunquet-sp? (A pastry filled with almond filling. The pastry is really buttery). We used to make bourgenois (sp?)- back in Oct. we put some whiskey in a mason jar with some white raisins and cinnamon sticks. Both are nice. For the bunquet you need almond paste, though, and I've never seen it here. Not every grocery store carries it back home, either. |

Both my parents emigrated in their early 20s so the dutch is still pretty strong (accents and everything). I know what you're talking about but I rarely ate it. I didn't like it as a kid.
My mother makes (basically) the same things every year. The only VERY VERY dutch things that are constant are the boeterkoek and "Gevulde Speculaas".
The dutch (w. europeans?) love their almond paste I will tell you that. |

Melt a bunch of white chocolate. Add crushed candy canes and perhaps a bit of peppermint extract if you have some. Pour onto baking sheet/pan/whatever. Let set in fridge. The end. |

Minced meat pie. Boil beef, pork, chicken. Remove from the water once it's cooked. Debone when it has cooled down. Season with a bit of nutmeg, salt and pepper, and onions. Fill the pie crust, bake, and enjoy. |
