Hey,

I have a quick question. I just ate at a Korean restaurant here in HK. I had dolsot beebimbap. When they served it to me it looked normal except it had a big scoop of uncooked meat on top, along with the egg and vegetables. I started stirring it and was getting grossed out by the raw meat. Anyway, it eventually got cooked by the stone bowl and tasted great. Is this the normal or traditional way of serving dolsot beebimbap? I don't remember seeing the bright pink scoop of meat on top when I was in Korea. Actually, I don't remember any meat in my beebimbap in Busan. Maybe it's because I always went to the mom and pop restaurants. Just curious.

raw eggs I have been served, but never raw meat. Thank goodness for the hotter than heck stone bowls.

You have what is called the *yeok-hui bibimbap*, which is also served in Korea. Yeok-hui is a Korean delicacy which is marinated raw beef. Normally served on its own in a high class bibimbap restaurant, it is also served in bibimbap.

When you come back, pop down to Jeonju, where it's famous for its bibimbap, and you will see how common it is.

Isn't steak tar-tar raw beef too? That's like ewwwwww man....

Steak tartar and yook hui are nearly the same dish. Both come from the mongols. The mongols brought their raw beef/spices/oil dish into Eastern Europe and Korea when they swept into both areas. Yook hui is frequently served at Korean weddings.

Cool! I love obscure information like this ^^^. Doesn't make me want to try it though. I'll drink eel bile before I eat raw beef.

Raw beef, of high quality, is incredibly delicious. Take a ribeye steak, rip it to shreads, marinate it with your own secret recipie, and eat. Much more nutrious than cooked stuff.
