I wish I knew more about
1) world economics. I don't understand completely what causes currencies to fluctuate.

2) cooking. I don't know much about the various ways of cooking and how they affect the tastes of dishes. I also don't know how different foods combine in a recipe or how to manipulate recipes to get desired outcomes. I'm one of these people that must rely completely on cookbooks.
