The person I talked to said for the 100,000W tourney, 80% of the money goes into the prize pool and 20% is for the house

Not quite. 80% goes towards the prize pool and 20% is tucked away for the WSOP main event package prize pool. Top 35 point earners enter a "freeroll" for the Main Event package, so the money doesn't go to Walker Hill or KPPT, it goes towards the grand prize.
