On the Damrak--the Dam Hotel- around 70 euros. Clean but the rooms are SMALL but with TV and Bathroom. It is about 5 minutes walk from the Old Church ( and Old Church Coffe Shop) and the Bulldog.

As for the cheese, I am not certain but I seem to remember the grocery stores in Schiphol issued global export certificates for customs officers worldwide and the tulips bulbs street sellers do too.
