My aunt and uncle are coming to Busan for one day (cruise ship stop) and will have about ten hours on the ground in Busan. I know the city and the area around the terminal a bit but not that well. They're getting a bit on in years (late 60s and early 70s) but are still healthy and would be up for a little bit of walking but not too much. Could any Busanites give any recommendation? Are there any museums that are really worth-while? How's the aquarium?

What about beomosa, the temple a little to the noth of busan.
You can easily get there by subway in about 45 mins and have a walk around...

it is a great temple and a good cultural thing to see....

Jalgachi fish market and Nopodong shopping area are both night next to the ferry terminal. Jalgachi is crazy, I 've never seen anything like it.

The aquarium is OK, but nothing really special.

Temple might be a good idea.

I just talked to my co-teacher and she said that the cruise ships will now come to the new terminal on Yeongdo which is about 5 minutes (taxi) from Nampo-dong and the nearest subway stop. There was a bit of debate over this though so just be sure you know where they are coming in.
