For a more ricotta-like texture I recommend sticking with lemon juice. In my experience vinegar makes more rubbery curds.
I've also read that this is the method for making marscapone, but you use cream instead of milk. |

Posco's trumpet - thanks for this very helpful post.
I'm on a diet - and often see cottage or ricotta suggested for use in recipes.
Have you tried this recipe with reduced-fat milk?
