I've never actually seen itfirst hand, but do they dump leftovers back into the containers, i.e kimchi? |

Do you really want to know?
And do you want to know how the cooks make sure the soup is up to par? (I'll give you a hint - it's not with some special tasting spoon.) |

I'm sure they do. I think the percentage of side dishes eaten is maybe 50%. Thats a lot of food to throw away in a day. Part of the fun of living here. i just try not to think about it when I'm eating them because some of them are really good. I love the potato and egg one and the quail eggs(don't have to worry about reuse there). |

I figure the side dishes are spicy enough and full of enough garlic to kill any small living thing anyways. Why not recycle them?!!! |

When I was living in 'small town' Korea I had a few aquantances who were restraunt owners and I was told that they saved the leftovers (vegetables and fruits) and sold them to pig farmers for feed.
Infact, I was told that pound for pound that the greens and such were more valuable as feed for animals then they were as people food.
My question is ... do you also worry about this sort of thing outside of Korea? |

I'd wager most people don't. Then again, in most people's home countries you don't have the cook and kitchen in full view from your table. Nothing to whet your appetite like seeing an ajumma taste the soup with the same big ladle she uses to serve it.
I've seen that at 4 different restaurants, so I'm inclined to believe it's common practice here. |

Of course, the places you go to may still be doing it, just not where you can see it. I'm sure you knew that already though. |

Yeah I knew that, but thought some first hand knowledge would be good for others...
anyhow when I leave a restaurant I always mix everything up into one mess of uselessness. I don't want to contrbute to an unsanitary practices. |

Yes it happens, and I mentioned it in another post.
But I have to say, even though it's a disgusting THOUGHT, it's probably far less harmless than many things we do...all of us.
It's common sense.
It's impossible to throw away all the uneaten kimchi.
Not using a condom with a stranger is far more dangerous.
And I have to admit I've done that.
But yeah, the side dishes are re-served. |

I'd rather go in on some unsanitary practice than deprive the world further of food that it's already going short on. Why don't you ask the people to just give you less side dishes if you're going to so much trouble to keep them from reusing food? |

I would rather eat in a restaruant where I can see the Ajuma tasting the soup with a soup ladle then eat in one where I can't see the prep-cook pissing on the fish. |
