So I'm flying back to Canada on June 28 after being here for 4 months as an exchange student.

Any last minute things that I should definitely see/experience in Seoul before I leave?

I've done most of the big things...
Seen Gyeongbokgung
Gone to COEX
Done the drinking/club thing in Hongdae, Gangnam, etc
Eaten sannakji
Been to Namsan
Been to Insadong
Shopped in Dongdaemun, Myeongdong
Drank at Han River

Anything essential I should do or see within the next few weeks? I don't wanna regret not having done something.

I'm a little surprised you seem to have left Namdaemoon off the list of places you've shopped. Probably just an oversight. One other market worth visiting is the one in front of Edae.

If you like hiking, try climbing Gwanak. They serve drinks at the top.
