Hopefully someone can help me with a plan i've cunningly hatched.
I'm hoping to travel through Asia for a few months holiday and enter Korea from China near Christmas to look for an English teaching job while on a tourist visa, then leave to get a work permit before taking the position. Ive heard from a guy i met this will be the best way to get a good position. Just wanted to check if any Brits or any one else had done this? Did it get you a better job than if you had put your signature to a contract before leaving home?

That should work, though the school might not want you to go home for Christmas before you start.
