Anybody ever run a summer camp/ intensive course? Fun ideas?

We have our curricula settled for the various classes, but I'm looking for some good ideas on 'breaking up the monotony' activities we can do.

The kids are between 10 and 13. There will be between ten and twenty kids in each group.
We have a gymnasium.
We have money to buy materials to make stuff (paper, cardboard, glue, paint, etc).

We're doing an hour of 'fun stuff' for every three hours of schoolwork.

I'm thinking...indoor soccer, dodgeball, 'red rover' or 'british bulldog,' and maybe some other kicking-and-throwing-stuff games for the gym.

As for making things...maybe have each class make a pinata, and then have a mad mexiparty at the end? Somebody will probably lose a tooth and it'll all end in tears no doubt but at least most of the kids will like it.

Anybody else ever do mid-sized group construction activites with kids this age? I'm considering some kind of cardboard and glue model-making of some kind...maybe a paper airplane contest...but still, I need to think of about eighteen hours worth of game/craft activities, so if you guys have any good tips I'd be grateful.

Maybe cooking? Science 'experiments' that don't require a lab?
