Crunchy Thai Noodles...

This none is so far off topic it might belong in the travel forum. If I have to move it, 'sok.

From Chang Mai north, you can get a particulat noodles dish like this:
Mild Yellow curry (Usually chicken)
Soft veges.
Soft noodles in the broth,
Topped with a big handfull of Crunchy Hard noodles, and some cilantro/corriander.
I was told it was a northern regional speciality. If someone could help me with a name I would be most grateful!
I'd like to look it up on the interweb and replicate it at home.

This is called "khao soi" which is a bit confusing as it's not rice!

It's my favourite food by far - not easy to find in Southern Thailand though Sad

Interesting to read that blog. It doesn't taste like most Thai food - more like an Indian curry?

It is a burmese influenced dish
