From among those on the list who are still living I personally would associate Paul McCartney the most with vegetarianism - although I can see why many who were fans of the Smiths would pick Morrissey based on this song: http://www.youtube.com/watch?v=vecCZsHlYEc&mode=related&search=

Paul became vegetarian later, and his activist late wife Linda's vegetarian line of products is still available in some places (outside Korea...) When he toured the U.S. with his next activist wife, Heather, he provided gourmet vegetarian meals for his entire crew, and he devotes a segment of his 2002 USA Concert DVD to promoting the benefits of a vegetarian lifestyle.

Sir Paul McCartney sums it all up: "If anyone wants to save the planet, all they have to do is just stop eating meat. That's the single most important thing you could do. It's staggering when you think about it. Vegetarianism takes care of so many things in one shot: ecology, famine, cruelty."

Actually, George Harrison should be prominently listed since he early on (based on his association with Krishna devotees) influenced many other musicians and celebrities (including Madonna) to at least try becoming vegetarian, and he was happy to hear that Paul eventually got into it (even though they weren't on speaking terms for a while over business dealings...)

In the 20/20 interview promoting her "Wonderful Today" book (relating her love triangle with George and Eric Clapton) former model Pattie Boyd noted that although George apparently quickly forgave her and Eric, he was "horrified" when he visited them for a holiday dinner, and he saw that she was no longer vegetarian...

I'd class Linda (RIP) McCartney more of a veggie that PMcC. In England she has her own veggie range. SO that's why I'd say her.
