It seems no one was in the mood to share recipes today, but that didn't stop me. I'm intrepid enough for two.

I had a recipe for Spicy Polynesian Wrap that was OK, but not 'knock your socks off' good. So I hunted around and found a recipe for Spicy Pineapple Sauce that turned the Polynesian Wraps from good/decent to very good. The sauce makes a barrelful, so you might want to reduce the recipe. The flavor is kind of sweet-tart that goes well with the coconut flavor, curry and lime. Anyway, definitely tasty.

SPICY POLYNESIAN WRAPS INGREDIENTS
� 2 pounds skinless, boneless chicken breast halves - cut into 1 inch strips
� 1 (14 ounce) can coconut milk
� 1 cup uncooked long grain white rice
� 2 cups water
� 1 1/2 cups all-purpose flour
� 1 1/2 tablespoons curry powder
� 1 tablespoon garlic salt
� 3/4 cup vegetable oil
� 2 limes
� 10 (10 inch) flour tortillas
� 1/2 cup shredded coconut
� 1/2 cup chopped green onions
DIRECTIONS
1. Place the chicken and coconut milk in a bowl, and marinate in the refrigerator 1 hour.
2. In a pot, bring the rice and water to a boil. Cover, reduce heat to low, and simmer 20 minutes.
3. In a small bowl, mix the flour, curry powder, and garlic salt. Drain the chicken, and discard marinade. Dredge chicken in the flour mixture to coat.
4. Heat the oil in a skillet over medium heat, and cook the coated chicken strips 5 minutes per side, or until golden brown and juices run clear. Squeeze lime juice over chicken, and discard limes.
5. On each tortilla, place equal amounts of rice, chicken, coconut, and green onions. Wrap burrito style.

SPICY PINEAPPLY SAUCEINGREDIENTS
� 1 (20 ounce) can crushed pineapple in heavy syrup, drained with syrup reserved
� 1 tablespoon cornstarch
� 1 teaspoon ground ginger
� 3/4 cup orange juice
� 2 tablespoons maple syrup
DIRECTIONS
1. In a medium bowl, mix the crushed pineapple, cornstarch and ground ginger. Gradually stir in enough of the reserved pineapple juice to make the mixture smooth.
2. In a medium saucepan over medium heat, blend orange juice and maple syrup. Cook and stir 5 minutes, until clear and thickened. Mix in the pineapple mixture. Continue to cook and stir until well blended and thick, about 15 minutes.

OR: Just dump it all in a blender, then cook till even thicker.

You had vanished as I have more or less on Dave's. I ran the printer on this will I probably try it.

Cool we could probably have some more recipes on here

That would be good. I think we are all bored of Korean food.
