I am having a small Thanksgiving dinner at my place this weekend, and normally I make a great cranberry sauce from scratch. However, I can't find fresh cranberries here in Korea, so I bought a can of jellied cranberry sauce (ocean spray).

I'm not here to have the canned sauce vs. homemade sauce debate. I prefer the homemade simply because I can vary it with different flavours. I'm just curious if anyone knows of a way to improve upon the canned sauce to make it more homemade tasting, or if I am stuck with cranberry slices rather than a sauce.

I also have been pondering what to do... I have been thinking of soaking dried cranberries in orange juice to soften them, then add to the canned stuff. Maybe a sqiurt of lemon juice if it gets too sweet.

Make sure the dried cranberries aren't full of sugar already. If so, water will work just fine. "Craisins" brand will be sickly sweet with OJ. You can't bring them 100% back though.

A neat thing you can do with canned cranberry is to put it in the freezer while its still in the can. Leave it for about 10 minutes. It won't alter it's flavor, but the outside edges with get a lovely milkly hue. Then when you cut it into slices at least it will look pretty. (I'm assuming jellied cranberry, not the chunky kind, which is awful out of the can.)

Yeah it's the jellied kind. Not my favourite. I wish I could make it from scratch, with my OJ and spices, and chopped up apple added. It just won't be the same.

I guess all I'll need is a knife to slice it.

I know it's a bit late for Canadian Thanksgiving but I did see some bags of frozen cranberries at Hannam Market today.
