I will be working a camp this winter in Korea, and will prepare a C4 visa in China to do so. The problem is I will visit home for Xmas, and my return flight leaves from Korea. I am not in Korea at the moment, and am working in China. I plan to fly to Korea the morning of flight back to Canada, and hopefully I can connect to my other flight without going through Korean immigration, which would cancel out my C4 visa, which I would need upon returning to Korea two weeks later. I could get my C4 in Canada if time allowed, but it won't. So, this is a complicated situation.
Basically, can I get my bags in Incheon somehow without going through immigration? Is there a procedure for this? Maybe someone has been in the same situation.

Try asking the airline company of the flight to automatically transfer your bags to the airplane heading for Canada.

If your layover in Korea is LESS THAN 24 hours you do NOT have to enter Korea (go through customs).
When you get off the plane, look for the door going upstairs to the departures level (in the main causeway of the arrivals level BEFORE you go through passport control. There should be a transit desk there to re-check your boarding pass and you will have a quick security check as well.
If you do NOT have a boarding pass for your next flight you can get it from the transit desk. Just present your ticket.
You are correct that you will void your C4 visa if you come through Korean immigration.
Make sure that your bags are checked through to your final destination when you check in for your first flight (or they will take a day or so to catch up to you).
