Working at Public Schools here you can get a "Certificate of Employment"at the end of your contract. And hagwons-basically just anything typed up with a stamp on it.

"Certificate of Career" as opposed to a CV and/or references? What's that?Is it just a requirement they plucked out of the air or are they referring to the same thing as the CoE?

Current employer: 재직증명서 (jae jik jeung myeong seo)

Past employer: 경력증명서 (gyeong nyeok jeung myeong seo)

You should be able to request either of these from a current or former employer at any time. Almost any teaching job outside of a hagwon position (e.g. university or corporate) will most likely require them as part of the application/hiring process.
