Today I made a chocolate souffle for the first time.

turned out pretty good, despite falling when I bumped the table after taking it out of the oven. Pictures taken by my 6 year old daughter so some of the shots didn't turn out so good, but she had fun mixing and taking pictures.

melting the chocolate


mixing chocolate and egg yolks


whipping egg whites and sugar


blending whites/sugar and the chocolate/yolk mixes


before the oven


after the oven


serving with fresh whipped cream (not from a pressurized can)

I've tried several recipes for Orange Sauce to use use with either chicken or beef in stir fries, but have had a lot of trouble finding one that tasted orange enough. I tried one last night that comes the closest so far.

1/3 cup orange juice
2 T soy sauce (I will reduce this next time.)
1 clove garlic, crushed
1 slice of ginger, shredded
1 tsp (dark brown sugar) or honey
1/4 t garlic chili sauce or red pepper flakes
1 T orange zest (I peeled some oranges, dried the rind and crushed it)
1/2 T corn starch

I like a lot of sauce, so I doubled it. As noted, next time I'll reduce the soy sauce.

Maybe I've grown used to the sound of crystal-shattering squealing and ear-hammering crying and self-centered me me me me me actions and excessive laughing at things that aren't funny -- if I can get used to you guys, the kids would be nothing.
