I am looking for some simple, fairly healthy recipes that I can make with ingredients that I can find here. I have looked online but a lot of the recipes I think sound good involve ingredients that I don't have and can't easily obtain in Korea. I'm not much of a gourmet cook, so the easier the better. One of my favorite things to make now is vegetable soup-easy to find the ingredients and throw together. My eating habits are terrible so I'm trying to prepare more meals at home and I'm really trying to include more vegetables and fruits. I am trying to lose weight but my focus is on overall good health and more on putting good things in than depriving myself of anything. The recipes don't necessarily need to be low fat/calorie/taste-just good and fairly easy to make. I have a range and a mini-oven. If you have any recipes you would like to share, please post them! Maybe there are other people interested as well and we can all share some ideas.

have you tried this site

it has a search function in that you put the ingredents that you have and then it will tell you what you could make.

Soups are easy, try pumpkin, carrot, potato and coconut milk

chilli is as well -beans, pork or chicken, canned tomato, spices

steamed/poached fish

chicken salad

one pot pastas

get some udon noodles and make a stir fry

I used to try to guess ingredents from restaurant food and try to make it at home.

another thing you could try is an iron chef challange. Take one ingredent and base a meal around it

The secret is to use your imagination, and if a meal sucks don't cook it again Laughing

though it's a meat dish,
this has recently become one of my favorite things to make for its ease, speed and cost.

from emart or lottemart i get the unseasoned beef sliced for bulgogi preparation.
(they are usually about 800 - 900 won per 100 grams).
i sautee them with salt and pepper then put them between slices of good bread with mustard and cheese for a quick roast beef sandwich.
you can add pepper/onions if you like it philly style.
there are many possible variations.
after struggling to find good sandwiches in korea, i have discovered that making them on my own is way more economical and tastier too.

I'm big on just buying whatever vegetables are in season and then stir frying them together with some pasta. Sauce can be anything, doeng jang has even proven pretty delicious. Sometimes substitute rice for pasta.

I have an oven now and I don't know what to do with it after being forced to do everything on the range for close to four years.

just buy a whole chicken, marinade it over night in something, then bake the bitch at 375F. or put in some salmon marinaded in garlic and lemon pepper powder. throw in a spooge of olive oil and some mushrooms at the last 10 minutes.

I'm a big fan of http://www.recipezaar.com/
there are so many recipes on there! Easy to use search function...you can search for ingredients too. They also have a very handy 'substitute' function...if you don't have one of the ingredients, they often offer a substitute.

Simple Salmon (buy them at Costco)

1/2 cup of maple syrup
1-2 lemons (for juice)
spring onions
1-2 tbsp soy sauce
garlic

Add them all together. Marinate for 1-2 hours. Cook in oven
Good stuff.
