Where do you live? In Seoul, every place I know that has both has them at exactly the same price. If you go to a place that specialized in sam gyup, you'll likely pay more than galbi somewhere else, and you'll expect better quality meat than the places that carry both along with the other stuff like gaklmaegi sal and mok sal.
And, yes, if you try trimming the fat off of sam gyup you're going to end up a very few, very tiny pieces of muscle fiber ... |

for me it depends on location. the sam gyup sal in korea is better than what you find in the states. the galbi in the states just has no comparison. in general i find the pork to be excellent here and the beef subpar. if you want beef, the states (or argentina) shine.
