Opening a western style cafe/restaurant soon. I would appreciate some tips on what to serve. Thanks!

All of them, plus french toast and bagel and fried mushrooms and bacon and sausages and eggs and fried bread and hash browns and...

It is brunch, right? Should BRUNCH include a variety of breakfast food?

Where will your restaurant be?

baked beans preferably in molasses...it just ain't a perfect breakfast without a side of baked beans.

Other than that all of the above are part of a healthy diet Very Happy

Oh... a few slices of fresh fruit are a nice touch too, whatever is in season

Make sure you have fresh fruit if you can, like cantaloupe. (that is if you are going for a nice place)

If you are going for a more low budget western style then study this menu: http://www.wafflehouse.com/ourmenu.asp

Although most people probably wouldn't like grits unless they were from the south....mmmm grits....

This is a seriously popular brunch chain in Canada, if you're looking for ideas. Oh, and "when in doubt, add bacon" seems to be a safe rule of thumb.

Brunch in the UK, oigirl, always includes baked beans and fried bread.
