Ok, now that your watermelon issue has been sorted OP, does anyone have any suggestions of what to do with too much cucumber?
Lately this seems to be the favourite gift to hand out to the foreigner & I have a fridge full.
Any easy recipes for pickling them?

I like cucumbers half peeled, dipped in salt. I eat them as a snack anytime. It's good after a workout, caus eyou can replcae your bodies salt, hydrate, and munch something with very few calories.

I've never been a huge fan of cold soups but I do find cold cucumber soup refreshing if made right.

About the cucumbers, too bad we do not live close together we could have traded some. But, I make cucumber pickles, and they last for over a month.

Get a jar, and cut cucumbers into rings, cubes, spears, what ever.
Cover with 1/2 vinegar and 1/2 water. Great vinegars here...apple and lemon.

Add some sugar (if u like sweet pickels) or dill and cut garlic. Shake the jar, and let it stay in the refrig for a few hours. The older it gets, the better it taste.
____________________________________________________________Stir fry them just like you would zuccini.
_____________________________________________________________Grind them with some nuts for a spread. Add garlic and if you like some ginger. May sound strange, but it is really tasty.

Slice them the long way, and scoop out the seeds. Mix tuna and mayo and mashed tofu and a little may and mustard. Fill them in the cucumbers.

Stuff them with rice and tell the koreans this is how we make kimbap.

I usually have too many and have to dump them.
Another real nice thing to do is clice them thinly and add them to yogurt.[/b]

This sounds like a delicious way to use up some cucumber! I am definately going to try it. I'm also a fan of adding it to plain yoghurt and eating it with Naan bread ... Mmmm.

Here are a couple of simple recipes I found that might be useful. Enjoy!

Watermelon-Cucumber Salad
Ingredients:

1/4 c distilled white vinegar
1/4 c sugar
1/4 tsp crushed red pepper
4 cucumbers, peeled, halved and seeded
salt
8 cups seeded and cubed watermelon
1/4 red onion sliced thinly
Combine vinegar, sugar and pepper in saucepan. Bring to a boil; boil 1 minute, remove from heat and cool. Slice cucumbers and toss with 1 tsp of salt. Let sit in colander for 30 minutes. Pat dry. Just before serving toss watermelon with salt in a large bowl. Add cucumbers, red onions, and pepper syrup and toss.

Cucumber Pineapple Salad


Ingredients:

3/4 cup sugar
2/3 cup white vinegar
2 tablespoons water
1 teaspoon salt
1 cup peeled, cored fresh pineapple cut into 1/3 inch pieces
1 cucumber, peeled, sliced thinly
1 carrot, peeled and julienned
1/3 cup red onion, thinly sliced
4 cups torn salad greens
2 tablespoons toasted sesame seeds
Bring sugar, rice wine vinegar and water to a boil in a heavy saucepan. Stir constantly until reduced to about 1/2 cup - about 5 minutes. Transfer to a large bowl and place into refrigerator. When chilled, add pineapple pieces. Cover and return to refrigerator for one hour.

Add cucumber, carrot and red onion to the pineapple mixture. Mix well. Place salad greens onto plates. Top with pineapple mixture. Sprinkle with toasted sesame seeds. Serve.

Yield: 4 servings

Cucumber Cocktail ((This is particularly nice with some Vodka added))



1 kiwi, peeled and sliced
2 c diced cucumber
1/4 c water
1 T lemon juice
dash salt
1 c ice; finely chopped
Mix in blender until smooth.

The watermelon - cucumber salad sounds sort of like my cucumber pickles. But what is pepper syrup??

The cucumber - pineapple salad sounds super. I wil make that since I have 2 pineapples. last week E-mart had them for 2,000 won and I bought 5. I cut some in cubes and put them in the freezer They make great smoothies.(and yes, I did mix some with watermellon)

I also in the rice cooker put chicken, pineapple, rice, garlic, a little hot pepper, soy sauce,l and some oyster sauce. (yes and water) Ta-da... sort of Chinese chicken. really yummy.

Pepper syrup is this part:

Combine vinegar, sugar and pepper in saucepan. Bring to a boil; boil 1 minute, remove from heat and cool.
