So if I have my Canadian CRC and am renewing my visa, can / should I get my CRC notarised / apostilled at the Canadian embassy in Seoul or the Korean consulate in Vancouver? Would either work?

Either would work. If you are in Korea now, do it here at the Canadian Embassy. If you do it in Canada, you need to get a public notary to notarize it, then take it to the Korean Embassy. I had the Canadian Embassy notarize mine last month. It was an easy process. And just a semantic point, Canada doesn't Apostille the CRC, they notarize it. If you need more info, ask away.

I'm in Canada now (I had to take my summer holidays early, before my contract expired, just to get it). I'll see about taking it to a notary public and then the consulate in Vancouver. Thanks.
