I know you can study whilst on an E2, but am I right in thinking that it would be illegal to study whilst working on an E1 visa?
I mean studying at a Korean university. |

Students are allowed to have side job.
But the exact rulings are unknown to me. |

If it is at your own university then no worry. It is fine (perk of being a visiting professor).
IF you mean at a different university then you need to apply for permission for an activity not covered under your status of sojourn to be added to your ARC. 60k won, an application and a uni acceptance letter (along with permission from your employer). |
