I'm wondering if anybody has been this way or done this, and could recommend anything? i arrive 2pm and depart after 11pm.

go to Ba Mien, real good restaurant. Walk around the city, just experience the food and surroundings. you won't have too much time there as the airport is pretty far frmo the city if I remember correctly.

You'll have to get a visa to get out of the airport.

True, and you can't get a visa at the airport. It's a socialist country.

The best thing for me about HCM city was the pho.

For us, Ho Chi Minh City wasn't the most inspiring city - you can check out the Cu Chi Tunnels if tours run from the afternoon, or that big market that I forget the name of (helpful, indeed).
Otherwise, I agree about the walk around, you'll be able to see some old buildings and some of the culture.
