So, I used to work in Korea for years. Got my diploma notarized, have no problems getting a criminal record check, always finished my contracts in Korea, never had any problems, yada yada.
This Spring/Summer I'd like to come back and teach BUT only for two months max.
Question: Would I need to go through all the loopholes that 1 year visa workers have to go through in order to get a 2 month stint? |

No; things have been tightened up a bit, so there are no more loopholes. You wouldn't be coming to teach English, would you? |
