I can find nothing conclusive regarding storage of Kimbap. I know it's meant to be eaten as soon as it's ready, or at least a few hours after - But if you stick it in the fridge in it's package, how long does it last? Usually the stuff you can buy at convenience stores is dated until the next day. I know the shelve life is only a few hours, but what about refridgerated?

I dunno what the 'official' shelf life is, but I have purchased kimbap and put in the fridge overnight and eaten the next day with no issue. The only thing is that the rice gets kinda hard after refrigeration.

You don't store it as it gets hard and unappetizing within 12 hours. Everyone buys kimbap as they need it. The only exception is hikers buy it and store it in their backpacks for about 3 to 4 hours and it's still OK. You can buy it for later the same day, but tomorrow or the next day, forget it.

just dont put it in the fridge. leave it out but eat it within 24hrs

yeah they do something to the store-bought kimbap to make it refrigerate-able
never put regular, fresh kimbap in the fridge, the rice gets funky

I like it cold so I put it in the fridge.

Lasts longer that way as well.
