Does anyone know of any volunteer opportunities (orphanages, shelters, churches, etc.) in the city?

Good on you, ironyj. It's nice to see people giving back to Korea. My volunteer work is what I miss most about not living in Korea anymore.

visit the Seoul Global Centre for lots of info on volunteering.

There are a lot of opportunities out there, it all depends on what you are interested in.
If you love animals, you can volunteer at the Itaewon Cat Shelter, who really need more volunteers as several long-term helpers have recently finished their teaching stints in Seoul. (you can find Nabiya Cat Shelter on Facebook, or PM for details). You can also help with the Daejon Dog shelter, you should be able to find the details on here somewhere.
Another random but very rewarding one: be a Sharing House volunteer!

Don't be discouraged by those who say things about volunteering being illegal. You can make it legal by getting permission from immigration. Or, just don't tell people about it.

Also ask your Korean teachers at school. I did and they were delighted I asked to help.

volunteering at the Seoul Global Center is actually legal. they've got it set up with the government. check them out.

Glad to hear some volunteering can be legal. I got really freaked out when I found out it could be illegal. Really discouraged me from seeking opportunities. Thanks for the links!
