Does anybody out there have any police themed lessons or know of any online resources for some lesson printouts?

I actually have to teach ESL to some police officers (but not in Korea). Very Happy

Just get them to explain what they do and take it from there. Watch CSI and ask them for similarities and differences. Have them organize how to commit the perfect crime ( I got bankers to discuss how to rob their own bank it was very informative) , play Clue.

As with any English it all depends on who and why they are learning, I'd suggest talking to them and then making a plan.
