In the spring, I took two online TESOL courses at University of Missouri, Columbia (and transferred them to UMass-Boston's online applied linguistics M.A. track recently).
Missouri allows you to enroll and has relatively relaxed admissions.
For example, if you GPA is high enough, you can submit a lesser number of recommendations to UMissouri. If you don't have time to submit your transcripts, they'll allow you to enroll and take classes anyway. I emailed them asking if I could take courses straightaway, then I submitted my transcripts *while* I was halfway through my courses. The tuition fees are low, and you get the in-state rate because it's online. If you hurry, you can start Missouri's summer class beginning in June.
UMass-Boston offers classes, too. I asked to take one or two courses outside the M.A. route. I emailed them and asked to be put on the wait list. However, I did so and was never contacted. I think it's because they do cohorts exclusively.
