I can't believe I've been living without sour cream for so long. If you want it, it's super simple.

1. buy fresh cream (find it between the milk and yogurt) ; not wiping cream
2. buy lemon (fresh or from a lemon shaped bottle) or distilled white vinegar
3. put cream in shakable container (lock and lock)
4. add a teaspoon of lemon/vinegar at a time
5. shake like crazy and check for consistency and flavor
6. age for sourness

Thanks K n K!

I always hate buying the big tubs of sour cream in Costco because they are so big (and trust me, sour cream does not freeze well).

Or you can just buy the real thing. Denmark brand sour cream is awesome stuff.

I hate how sour cream only comes in giant tubs. I'd only eat like a cup of it and throw the rest away.

I wrote an email to the Denmark company requesting that they sell it in smaller containers. They would sell alot more overall and make alot more money if they did. They never replied.

It ain't the denmakr sour cream folks - its the d&mn costco - they only want to sell in bulk. If they don't have a big container, they'll package 2 or 3 together to make you buy more.

I tried that recipe once, it tasted like crapola. why not just buy sour cream, we are making tons of cash here, are you that poor

I live too far away to go to Costco. To be fair, the sour cream I make doesn't exactly taste like sour cream. Then again, it does come close. The cream has the texture and look of sour cream. The lemon gives it that tangy flavor. If you let it age for an hour or so out in the open and then let it set over night in the fridge, it'll taste a lot closer.

I also notice that the creamy texture might be used to make a base for ranch dressing. I'll tell you later how successful I am.

using lemon acidifies the milk or cream, but not the same way that a lacto bacteria does. In order to make sour cream you will need to use fresh buttermilk as the starter not lemon.

One closer solution that I have found is to mix one cup of fresh yogurt with blended cream. It is a lot closer to flavor than using lemon, but still not as good as using buttermilk starter.

um....no. It's only ever sold in the big tubs whether you get it at Costco, the Dept Stores or a Mart. Denmark only makes one size tub, and Denmark sour cream is the only brand commonly available. Just sayin'.
