I am hoping to make this thread a sticky, so nobody has to ever sift through the garbage. I will try to keep this updated and post the goodness on the first page for everyone's convenience if it's successful.
My goals: an up to date list of fun things to do in Seoul in the daytime or night, that arent drinking or clubbing related. Things to include: where it is (subway stop, whatever, so we can find it), how much it costs (if anything), and what time they open/close if you know.

Lotte World / Jamsil Station line 2,8 - A decent sized amusement park to kill a day. Kind like a mini-Disney World. Decent rides and decent prices.
There is also some things to do in the Adjacent mall.
A live shooting range (kind of expensive i think).

Yeoido Park Yeoinaru station- Get off exit 2 and enjoy the park. You can rent bikes somewhere, have to ask someone.

Seodaemoon Prison - Dongshinmun line 3 exit 5- I guess a SK prison the japanese used for koreans during the war. tues-sun 9-6

Tennis: Public courts at near banghwa station. take exits 2 make a right and go until you reach the park. go straight across and you will find some wooden steps going down into what looks like a construction site under the bridge. courts are there.

Salsa lessons: Bonita - Hongdae (havnt been yet, but ill update it) take a dance class if you want to expand your social circles and/or meet some quality ladies.

Sindaebang station, line 2.

Exit the station and you will find 3 or 4 pojangmachas selling great dakgotchi (spicy barbeque chicken on a stick). They have tables and serve the chicken with odaeng so you can make a meal of it.

I know, it's not that special, but the place has an authentic gritty feel and it's cheap.

Open: 5pm to late on weekdays. lunchtime till late on weekends.

To make an evening of it, walk through boramae park after dinner. The park has one of those computer controlled fountains, a skatepark, a rock wall, crazy ajummas doing aerobics, all kinds of cool stuff. Probably not much to see in winter though

Insadong for a day. Contemporary art galleries during the day. At night enjoy Makoli(Korean rice wine) and Korean pancakes.

Rent bikes or hang out in Yeouido Park. Line 5 Yeouido Station.

Also in the area is Building 63, with an aquarium (at the bottem) and art museum/viewing deck (at the top). Tickets are about 13-15,000 won each.

mini golf at IPark Mall/Yongsan Station. on the roof of the mall. 7,000 won for 18 holes, i think, maybe 4,000 more for 36 holes (there are two 18 hole courses). i don't know the hours, but i know it is open some after dusk, they have lights.

line 1 to Yongsan station, or line 4 to Sinyongsan station.

For 1st Timers/Rural Types making a visit

Start- Enjoy a nice breakfast at a Hotel in the Gangnam area. Preferably at your hotel. Don't be a Jimjilbang bum.

What better way to spend an afternoon than at the race track. Horse Racing of course. Take Line 4 down to Gwacheon and go to the track there.

But that's not for many...so here's some generic ideas

Shopping Time choose either COEX + Hyundai Dept. Store or Myeong-dong. Or both if you start early. I recommend COEX Hyundai first because you can shop and then eat at On the Border or bop on down to Yeoksam and eat at Toma Tillo. Plus If you are staying in the Gangnam area you can get some decent groceries at Hyundai.

Then go to a museum. If Art is your thing go to the National Museum of Korea or th Seoul Museum of Art (they recently had Renoir, Warhol due up soon) If Culture/History- Go to Gyeongbukgong and the museums around it.

After that do some more shopping, or go to Itaewon and get that ethnic cuisine that your -eup or -myeon doesn't have. Or go to Hannam and find one of the groceries there that sells Western food.

Dinner time- Grab some sushi. The kind we're used to back home. Find one of those revolving conveyor belt joints and have a Sushi dinner. Again, probably Gangnam area for this.

Catch a ball game at Jamsil (summer time)

Or go to Yeouido after dinner and do the bike thing like Missihippi suggested.

Then well, its either Hongdae or Gangnam/Apgujeong. Wherever the night takes you. Hang out with your Korean friends, they'll know where to go.

Late night- The silliness that is Dongdaemun.

Or just ride the subway and just get off at random stops. Seriously. Best adventures are spontaneous.

Dragon Hill Spa jjimjilbang, I really like to go there with a few friends or a girl, and lay in the hot sauna rooms and chat. Taking a boiling hot bath with a bunch of nude ajosshis is always fun too. The sauna feels especially nice in the winter, when you come out your muscles are so relaxed you want to just melt into a puddle, and you will sleep like a baby afterward. They have food and drinks, too.

It's a fun activity after a movie at Yongsan CGV (which usually has English subtitles for Korean movies).

The Spaland at Centum City in Busan was much newer and nicer, though, does anyone know if there's a jjimjilbang like that somewhere in Seoul?

(Pretty much everything else I do for fun in Seoul involves drinking, so it doesn't qualify for this list...)

Yeah, and if you go north of Insadong (from Anguk Stn.), up that long alleyway it takes you to Samcheong-dong, which is right east of the Blue House. There are lots of little boutique stores and funky cafes, bars, and restaurants there, and a nice view of Mt. Bukhan--and not many foreign tourists or souvenir shops. It's a good date spot, I've taken a couple of girls there and it led to great success.

Board Game Cafe in gangnam is fun. Some pretty good games, open in the evenings. Go up exit 7 and take the first turn right, up the hill. It's right along the next street, on a second floor.

Also in Gangnam, Kyobo bookstore can be great. Has a fantastic foreign section.

Or why not check out the huge art store in the university at Hongik University? Open later in the evenings, even on sunday, and you can pick up some fun supplies. Why not pick some stuff out and try out a project?

While Yeoinaru is closer to building 63, Yeouido station is closer to part of the park where you rent bikes, or play basketball, or get drinks from the buy the way. The park runs between the two stations, however the south side is where the concrete area is.

And yes, i mean Yeouido and not "yeoido".

Did the dude just suggest going to a bookstore? Seriously? Wow.

I never understood the appeal of Insadong. I think it's pretty boring, and really, really touristy.

What to do...what to do...

The fish market. Noryangjin. That's the place to go and have dinner. Then when the old man there at the restaurant start talking to you and finds out you went to the same University that his son is now at, you get a lot of free beer ^^ Oh yeah, things besides drinking. Well, you can just turn down the free beer.

Go hiking at Gwanak-san (Gwanak Mountain).

Get off Line 2 at Sadang Station exit 4, walk up the road a bit then take your first right, follow that road until it ends, that start up the mountain. It's 2-3 hours up if you go all the way to the top, but you'll start getting great views within 30 minutes of climbing, so it can be as long or short an activity as you want it to be. Don't forget to bring a lunch and some drinks, though, cause there ain't much for sale on the mountain.
