I only have 7 days in Thailand, can anyone make any recommendations for me?

I'm more interested in doing cultural stuff than hanging out at beaches or hooking up with prostitutes.

Well if you want to miss out on all the fun stuff then...(just kidding)

In Chiang Mai you can go play with the tigers and do some elephant trekking. My friends did it and they said it was so amazing.

Totally CHIANG MAI region for you then. Even the fellow foreign travellers thereabouts are more like you, younger and more culturally atuned, not many of the sex tourists you see southwards. Of course, more hippie druggies up there too.

I spent 30 days in Thailand and needed a couple of more months to do the country justice. But my week and a bit in the Chiang Mai area was by far a highlight.

kanchanaburi, erawan national park (waterfalls). totally worth it, and you can go there on your way up north. you only need like a day there but you could easily spend more relaxing. awesome hostels on the river and a great quiet little place.
