Secure a job before, during or after my month off?

I've been at the same hagwon for years and it's finally time to move on.
I'm going back to Canada for a month off(late June-late July), then plan to return in August. My visa runs out a couple days after my last day of work.

I've got a few questions I hope some of you can answer.
An important point to remember is, withdrawing my lump sum pension contributions is a must.

I'm wondering...If I secure a new job before I leave Korea on my holiday, can I still recieve my lump sum pension withdrawl? Or would this complicate things because the Pension office might find out I plan on returning?

If not, then I will likely continue looking for jobs here while I'm home. Is there a chance I could find a job, get all the proper paperwork in place and start at the beginning of August? All in one month? Too be honest, it sounds like a hassle to do on my vacation as I'll be travelling all over the country.
Will I need to do an embassy interview?

My other option would be to fly myself back to Korea on my own dime at the end of July and look for jobs while here. I would just have to hope for a healthy flight allowance. I have a free place to stay for a month and wouldn't mind the extra time off. But I'm afraid if I did find a job, I'd just have to fly back to Canada for the damn interview anyway. Can I do the interview while home on vacation even if I don't have a job secured?

can't answer much on the pension but just to settle your nerves and relax you about the interview, those who have already obtained an E2 visa in the past do not need to have an interview.

No worry. Ticket home, ARC expiring, passport (to show you are entitled) and bank information.

It is doable. You won't need the embassy interview. You can start looking in June and complete your application at your convenience. The visa confirmation number is good for 90 days after issue. The visa (for entry) is good for 90 days more after that.

What you want is easily do-able.
Find a job with an August or Sept. start.
Get your refund arranged (deposit to your K-account if you want).
Go home for your vacation - get your docs in order and get your confirmation number.
Get your visa.
Get your ticket back to Korea.
Fly back to Korea and start work.

You CAN have your pension deposited to your Korean bank account.

The consular interview is ONLY required IF you are applying for your 1st E2

OR

you have a black mark in your immigration file (caught working on a tourist visa, doing privates, overstay, etc.)
