I've been defriended a time or two. Usually, I don't notice until Facebook tells me that I might want to become friends with the person because we have some friends or interests in common. Once, I wrote to the person and said "What happened? I thought that we were already friends." but that was a special case. If someone doesn't want to be my friend, there are plenty of people who do. Why bother with 'em?
