Is anyone else in Korea making cheese? I'd love to compare notes. Just got my cheese fridge set up, but I still need to get the humidity higher.
I've got a couple goudas in there now, and a leicester ready to go in as well. |

I've made a simple goat cheese and another cultured cheese using Kefir that I make daily. I'm thinking about ordering some rennet online and getting into the harder stuff.
What did you use for a cheese press? I've seen simple plans for making them online, but I'm also thinking of checking out the wooden tofu presses that are available here. |

Just be aware that grocery store milk usually doesn't work - it's pasteurized at too high of temperature. If you're going to get rennet you'll need some cultures as well. Some low temp meso is a good start.

I've got a 1 kg Kadova cheese mould. Expensive, but very nice. To press I'm just using a 20 liter pot right now. I need to get my press built one of these days. |
