I just recently started applying for teaching jobs in Korea. And by apply, I mean, just sending out resumes by email and hoping something will stick...which is not very proactive I admit but I'm going to start calling soon.

My question is, should I start getting things like my state criminal background check, visa application, etc...ready now?

It's best to have all docs in hand (yes, I know, they can become outdated, but that is a chance you take). If you haven't gotten the ball rolling, do it yesterday. See other threads about people who help in the hiring process for their schools. Those with out all docs ready are immediately out on the back burner behind those that have them.

I am going to start filling out the forms and getting finger prints done for the RCMP check. I will keep a could extra forms. Apparently they are only valid for 6 months, which is total nonsense because it is physically impossible to break the law when you are not in the country.

I wish Korean immigration would understand that these kinds of checks take about 3-4 months to do. Why make them valid for only 6 months, especially after you submit one?
