I'm currently looking at moving to Jeju next year with my better half. I'm thinking about taking a housing allowance rather than the place the school would provide, as I'd like something a little nicer, and to not cook and sleep in the same place. Is 10mil key money plus lets say 600k a month realistic for something with more than one room on Jeju? There is sod all info on this online. All I've learned so far is that jeonse doesn't happen in Jeju, only wolse and outright purchase.

Jonsae does happen but doesn't seem to be as common. What is common is a mix of deposit and one year rent in advance.

10mil and 600k can get you a sweet place. Places by the sea will be more expensive but if you don't mind being the the countryside, you'll get a better place.

Jeju has a moving season (around korean new years) when a tonne of people shift. you can get a place outside that time but there are less options.
