I see it is spelled two ways on the net
Is one the Japanese version

Redaxe : yeah I think that is a major ingredient and maybe a little ketchup too but there is more to it

Not sure at that aforementioned restaurant, but generally (at least in original Japanese versions), it's demi-glace.
Some (cheaper) Korean places have some mystery (creamy, mayo-based?) sauces, which are just disgusting... So, when no demi-glace is available, I prefer plain ol ketchup or curry sauce...  |
