So I'm trying to get a batch of sake going, but I can't figure out what the Japanese 'koji' enzyme is called here. Any leads? |

Are you talking about the fungus? Aspergillus ory...something? I'm not sure that you can find that in Korea. Just get some sake imported, for God's sake. that's right, I went there. |
